Scones

Here is a recipe for this English classic - scones. The famous 'cream tea' features scones served with thick cream and strawberry jam.

 

Berni's recipe for scones (this is from my school cookbook!)

Ingredients:

8 ozs (225g) plain flour

2ozs (55g) unsalted butter

1oz (25g) sugar

1 egg, beaten

2 level tsps cream of tartar

1 level tsp bicarbonate of soda

milk to mix

Variations

2ozs grated cheese (cheese scones)

or 2 ozs dried fruit (fruit scones)

 

Method:

Set oven to Gas Mark 7 or 200 0C

Rub the butter into the flour in a bowl

Add sugar and fruit or cheese

Add egg and mix to a dough (add extra milk if necessary) don't handle too much

Roll out (2 cm thick) and cut into rounds

Place in a greased baking tray (my sister's tip - keep the scones close together so they rise better)

Wash with egg and milk (or just milk) to give a glaze

Bake for 10 to 15 minutes

When they have cooled a little (they are better eaten warm) split and butter, eat with jam if desired
