My favourite recipe

Take 500g of apples peeled and cored and cook them in a small amount of water until soft. Add 2 or 3 tablespoons of sugar (to your taste) and place the sweetened apple in an ovenproof dish. Weigh out 350g of plain flour and place in a mixing bowl, add 175g of butter or margarine and ‘rub in’ (rub between thumb and forefinger) until the mixture looks like breadcrumbs. Add 175g of dark brown or muscovado sugar and stir into the flour and butter mix. Put the flour mixture on top of the stewed apple and spread it out to cover the fruit. Sprinkle a little ground cinnamon on top and bake in the oven at 180C /350F/Gas 4 for 40-45 minutes. Remove when the topping is brown and a bit crispy. Serve with cream, ice cream or custard.
