Roasted butternut squash for a wintry day

I find this such a useful and quick recipe, as it suits vegetarians, and can be adapted for other squash-like vegetables. Good for you, too, these vegetables! You could use a good vegetable oil, but I find butter improves the taste noticeably. The criss-crossing of the flesh helps the squash cook quicker, but also looks pretty!
