A taste of summer – some summer salads – answers
1 Broad bean and feta salad
1 Yes, unless the person is a vegan, so would not eat cheese (or any other dairy product). Feta is a white, salty Greek cheese made from sheep’s or goat’s milk.
A vegan – pronounced vee gan is someone who does not eat or use animal products.
2 Trimmed – the spring onions must be trimmed before they are sliced. That means the roots, perhaps the outside layer of skin and some of the oldest leaves have to be cut off before they are used.
Typically, we use the verb ‘trim‘ about cutting and neatening a hedge, hair, paper or flowers. We also use the verb ‘trim‘ to mean decorating an object, especially along its edges – eg the jacket is trimmed with red cuffs and red buttons.
3 Coarsely.

6 Dressed
to dress food is a) to add a liquid, especially a mixture of oil and vinegar, to a salad for additional flavour – eg a dressed salad – b) to prepare meat, chicken, fish, etc so it can be eaten – eg a dressed

13 Shallow – adj – 1) having little depth – eg a shallow dish, shallow water 2) superficial – eg a shallow attitude to life 3) lacking interest, subtlety or substance – eg a shallow reply.
4 Cauliflower, mangetouts, chilli and caper berry salad

15 Heaped – a heaped teaspoonful of Dijon mustard.
16 Discarded.

5 Roasted pepper, spelt and pistachio salad
18 Yes. Spelt is a grain which is a separate species, or a subspecies of wheat.
19 Lengthways – we also have lengthwise, widthways or widthwise and sideways (but not the alternative version!).
20 Simmer.
6 Orange, feta and herb salad
21 Yes.
22 Dice.
23 Crosswise – we also say crossways.
24 A strand – eg a strand of hair, a strand of string.
